I have another honor society meeting this afternoon and I was planning on going, but that was before last nights Dining Room class and standing on my feet in heels for 7 hours straight. So, yesterday I thought about what to bake for this weeks meeting and I thought about the delicious carob chips I bought at HEB on Wednesday. From the BBC America show You Are What You Eat I got the idea of carob and dates going together.
The problem I ran into is that I ran out of time! Last night was the opening night of Bistro and I'm on the wait staff. I had to be at school by 3 and I didn't start baking until 1. So my advice is to thoroughly spray your parchment paper with nonstick spray. I did a thin coat and spent 30 minutes peeling the paper off of the cookies. It was not a fun job!
These cookies are a little bitter, so make sure to add enough sugar, but not too much. A glaze might be nice on these as well.
Ingredients
4 bananas
6 dried dates
1/2 cup soy milk
1 1/2 cup oats
1-2 cups whole wheat flour
1 tsp vanilla
1/4 sugar
1/2 cup carob chips
1. Reheat oven to 350 F.
2. In a food processor or blender, combine the bananas, dates and soy milk. Mix until smooth.
3. In a bowl combine the oats, flour, sugar, and carob ships.
4. Mix the vanilla into the banana mixture.
5. Pour the mixture over the dry ingredients.
6. Mix until combined.
7. Place parchment paper on cookie sheets and spray with non-stick spray.
8. Divide the batter into Tbsp portions and press with fingers to flatten.
9. Bake for 12 minutes or until firm to the touch.
