Settling In

We are moved in to Utah! Well, almost moved. We still have a lot of books to put away and we have to put pictures up still. Almost finished though. I have done some cooking in the week that we have been moved in. I tried a new way of doing tofu that I found wonderful!

I took a container of tofu and cut it into 4 triangles. I then cut each triangle into 5 triangles. I seasoned each one. Some of them I put salt and pepper. Others I seasoned with steak seasoning. I'm thinking about lemon pepper or cumin or chili powder next time. Then I put them into a lightly greased really hot pot. I let them brown on both sides and put a small amount of liquid smoke into the pot. Some I ate just like that and other I marinaded in soy. It was very good! With this I had roasted potatoes and a salad.

For the potatoes I took 2 Idaho potatoes, 1 carrot and 1/2 an onion. I put these in a pot with a lid and roasted them in the oven at 350F for and hour and a half. I seasoned them lightly with salt and pepper.

The next morning I made a tofu scramble. I took 1 serving of tofu, 1/2 an onion, 1 clove of garlic, gimme lean sausage, spinach, and soy cheese. It was a nice change. I normally eat oatmeal for breakfast, but I get sick of it so fast.

I didn't take a picture of this morning's breakfast, but I made myself sauteed spinach, one pancake, and pan fried tofu like I described above. I made my husband 2 pancakes and a fried egg. I think we enjoyed the change. He normally has a bagel with cream cheese.
